Pork Tacos with Pineapple Salsa Recipe

Let’s Taco ‘Bout It:

Succulent shredded pork is topped with a sweet pineapple salsa bursting with avocado and lime juice making it the ultimate summer-time taco.

Pressure Cooker Directions

  1. Pat the pork dry with a paper towel and season both sides with the pork seasoning. Place the pork in the cooking bowl and pour Pineapple Tea over the top. Add the chopped pineapple, cinnamon sticks and ginger.
  2. Place the lid on the pressure cooker and lock into place. Press the MEAT button and set the timer for 35 minutes.
  3. When the timer goes off, use Quick Pressure Release.
  4. After all the steam has released, carefully open the lid and remove the pork and place on a large cutting board. Allow pork to rest for 10 minutes. Using two forks, shred the pork.
  5. Meanwhile, in a large bowl add all of the salsa ingredients and stir to combine.
  6. Place about ¼ cup pulled pork in the center of a tortilla and top with pineapple salsa.

Slow Cooker Directions

  2. Place the lid on the slow cooker and cook for 3 hours on high.
  3. Remove the pork and place on a large cutting board. Allow pork to rest for 10 minutes. Using two forks, shred the pork.
  4. Meanwhile, in a large bowl add all of the salsa ingredients and stir to combine.
  5. Place about ¼ cup pulled pork in the center of a tortilla and top with pineapple salsa.
