Homemade pickled radishes are secretly easy to make and provide the perfect crunch when paired with salty smooth salmon.

Directions

  1. In a medium bowl, toss radishes with garlic and ½ tsp. dill.
  2. In a small saucepan heat the sugar, salt, vinegar and water and pickling spice over medium-high heat, until sugar is dissolved, about 2-3 minutes.
  3. Pour the vinegar mixture over the radish slices and cover tightly with saran wrap. Place in the refrigerator for at least an hour to pickle.
  4. In a small bowl, whip the cream cheese and remaining ½ tsp. dill on medium speed with a hand mixer until combined.

  • 1 tsp. dill, divided
  • 1 clove garlic, thinly sliced
  • ¼ Tbsp. sugar
  • ½ tsp. salt
  • ¼ cup white vinegar
  • ⅓ cup water
  • ½ Tbsp. pickling spice
  • 4 oz cream cheese, softened
  • 9 oz salmon nova lox
  • 4, ½" thick slices potato bread

  1. Using the toaster, adjust the browning control to setting 4 and place 2 slices of bread in the toasting slots. Press the lever down fully to begin toasting cycle. Repeat with remaining slices.
  2. Spread the cream cheese among each toast slice and top with the salmon and pickled radishes.
